Il s'agit de galettes qui ressemblent aux produits carnés à base de soja, une légumineuse très riche en protéines, avec des céréales comme le sarrasin, le blé, l'avoine, des haricots, ou des lentilles. Certaines recettes y ajoutent du jus de betterave, qui apporte cette couleur rouge du sang. Le soja utilisé est d'abord pressé afin de le séparer de son huile, puis il est cuit à haute température pour le débarrasser de certaines de ses propriétés, enfin le tout est réhydraté puis mélangé à des légumes.
