Caro's Tuna Dip
One can (185 grams) Sirena tuna in oil
1/4 chopped red onion
Two tablespoons lemon juice
One hard boiled egg
Three tablespoons quality mayonnaise
One tablespoon Olive oil (optional)
Two/three anchovies
Two tablespoons large capers drained
Whiz all ingredients together adding olive oil at the end if needed for texture
Fry capers in hot pan sprayed with oil
Place tuna mixture in bowl and top with capers
Serve with crackers, warm baguette or crudités
Corrie's friend adds 2 tablespoons of brandy!
