Jen Hutton’s Lemon Ice-Cream
This ice cream literally takes 10minutes and is always a hit – served with berries – your guests will be screaming for more.
Serves 8
Cooking Time: freeze overnight
600ml cream
1 and a half cups caster sugar
Juice and rind of 2 lemons
Blend cream and sugar in a food processor until thick and flowing. Add the juice and rind of lemons and blend until mixed in. Pour into an ice-cream tray or individual moulds and freeze.
Cook’s Tip: This ice cream melts quickly. Do not remove from freezer until you are ready to serve.
