Today’s episode is all about coffee. I am joined by Andrew Salisbury, co-founder of Purity Coffee.   • Andrew’s background has nothing to do with coffee.
  • His interest in coffee started to rise about 4 years ago when his wife was having some health issues, yet she doesn’t want to give up coffee.
  • He was introduced to the professors of Vanderbilt University Institute for Coffee Studies where he found out that the benefits of coffee according to researchers and scientists are very different from what the general public know about it.
    • They introduced Andrew to one of the top coffee scientists in the world, Adriana Franca from University of Brazil.

    • Finding the right coffee beans, source and process.
    • Reasons not to turn it into a business were more abundant than the other way around.
    • Achieving high number of chlorogenic acids comparable to the top coffee brands in US

 

[6:00] Coffee and Health: What’s in your coffee?

  • Drinking coffee is one of the healthiest things you can do to protect yourself against major diseases, increase physical performance, enhance brain function and contribute to longevity.
  • People don’t buy coffee based on health. Thus, coffee producers don’t keep in mind health in their production.
    • The big drivers of coffee today are:
      • Cost
      • Convenience
      • Taste
    • Coffee is the most heavily treated plant (pesticides) on the planet, next to tobacco.
    • Coffee beans are sold by weight.
      • Farmers spray their beans with water to make it heavier. Higher moisture content encourage growth of molds and mycotoxins.
    • Dark roasted coffee beans are the most flavorful but has the least amount of antioxidants.
    • As one of the well-researched topics on the planet, there are about 19,000 studies done on coffee and health. Yet, the vast majority of these findings have yet to reach the general public
    • Coffee’s health benefits have been extensively researched and generally agreed upon.
      • Coffee is good for you. But, it can be made better.

 

[10:48] Tips on how to buy coffee

  • Ask for a specialty grade organic coffee.
  • Look for medium roast coffee (city or full city).
    • Under roasted coffee have higher levels of acrylamide.
    • Over roasted coffee have burnt compounds and lower levels of antioxidants.
  • Make sure that the coffee fresh.
    • Antioxidants drop off dramatically after 20 days of roasting.
