Ε: Έλα Δανάη μου, τι κάνεις; / Hello Danae, how are you?

D: Γεια σου αγάπη, καλά! Θυμάσαι εκείνη τη νόστιμη συνταγή για παστίτσιο που μου έδωσες; / Hi love, I'm good! Do you remember that tasty recipe for pastitsio you gave me?

Ε: Φυσικά! Χαίρομαι που σου άρεσε. Την δοκίμασες να την φτιάξεις μόνη σου;/ Of course! I'm glad you liked it. Did you try making it on your own?

D: Ναι, τη δοκίμασα! Αλλά νομίζω ότι κάπου έκανα λάθος. Δεν βγήκε τόσο νόστιμη όσο η δική σου. / Yes, I did! But I think I messed up somewhere. It didn't turn out as tasty as yours.

E: Ωχ, τι συνέβη; Ίσως μπορώ να βοηθήσω να εντοπίσουμε το πρόβλημα. / Oh, what happened? Maybe I can help us identify the problem.

D: Νομίζω ότι έβρασα πολύ τα μακαρόνια και η σάλτσα βγήκε πολύ νερουλή. / I think I boiled the pasta too much and the sauce turned out too watery.

Ε: Α, κατάλαβα. Για το μακαρόνι, δοκίμασε να το μαγειρέψεις ένα ή δύο λεπτά λιγότερο από τις οδηγίες της συσκευασίας και βεβαιώσου ότι το στραγγίζεις καλά πριν τα τοποθετήσεις στο ταψί. Όσο για τη σάλτσα, αφήσε τη να σιγοβράσει λίγο περισσότερο για να πυκνώσει. / Ah, I see. For the pasta, try cooking it one or two minutes less than the package instructions and make sure to drain it well before placing it in the pan. As for the sauce, let it simmer a little longer to thicken.

D: Αααα κατάλαβα. Θα το δοκιμάσω ξανά ακολουθώντας τις συμβουλές σου. Θύμισε μου πως φτιάχνουμε τη μπεσαμέλ. / Ahh, I got it. I'll try it again following your advice. Remind me how we make the bechamel sauce.

Ε: Ωραια! Πρώτα, θα λιωσεις το βούτυρο σε μια κατσαρόλα σε μέτρια φωτιά. / Great! First, you'll melt the butter in a saucepan over medium heat.

D: Πόσο βούτυρο θα πρέπει να χρησιμοποιήσω; / How much butter should I use?

E: Θα χρειαστείς περίπου 6 κουταλιές της σούπας βούτυρο για τη σάλτσα. Αφού λιώσει, πρόσθεσε ίση ποσότητα αλεύρι. / You'll need about 6 tablespoons of butter for the sauce. Once it's melted, add an equal amount of flour.

D: Κατάλαβα. Για πόση ώρα πρέπει να το μαγειρέψω αυτό; / I see. How long should I cook this for?

Ε: Για περίπου 2-3 λεπτά, ανακατεύοντας συνεχώς μέχρι να πάρει ένα χρυσαφένιο χρώμα. Στη συνέχεια, αργά προσθεσε ζεστό γάλα, περίπου 2 φλιτζάνια, για να αποφύγεις τους σβολους. / For about 2-3 minutes, stirring constantly until it turns golden brown. Then slowly add warm milk, about 2 cups, to avoid lumps.

D: Πρέπει το γάλα να είναι ζεστό; / Should the milk be warm?

E: Ναι. Αφού προσθέσεις όλο το γάλα, συνέχισε το ανακάτεμα μέχρι να πυκνώσει η σάλτσα. Συνήθως παίρνει περίπου 5-7 λεπτά. / Yes. After you've added all the milk, continue stirring until the sauce thickens. It usually takes about 5-7 minutes.

D: Πρέπει να την αρωματίσω κατά τη διάρκεια; / Should I season it during cooking?

Ε: Ναι ναι! Θα βάλεις μισή κουτάλια της σούπας μοσχοκάρυδο, λίγο αλάτι και λίγο πιπέρι. Εμένα μου αρέσει πολύ να βαζω και τριμμένη παρμεζάνα από πάνω. /Yes, yes! You'll add half a tablespoon of nutmeg, a little salt, and a little pepper. I also really like to sprinkle grated parmesan on top.

D: Τέλεια! Τα σημείωσα όλα!! Σ’ευχαριστω πολύ. / Perfect! I've noted down everything!! Thank you so much.
