疫情时期的烧饼店 (Yìqíng shíqī de shāobǐng diàn) 

How does a Shaobing stall stay strong during the pandemic

As we know, the pandemic has damaged many industries, especially restaurants. Failing to adapt to the new norm has pushed many restaurants to close down. Some small caterers, on the other hand, may find it easy to adapt and develop. Let's hear the story of a small Shaobing stall in New York City, and see how did two women selling baked flatbread with delicious feelings survive the pandemic.


纽约的皇后区,有纽约最大的华人社区-法拉盛。

疫情期间,这里的多家餐馆被迫关门。

去年9月,钰锟烧饼在一个不起眼的小型购物中心内悄悄开业。

于和她的生意伙伴佟是这家店的老板。

一个人负责收银,另一个人负责制做种类繁多、热乎酥脆的山东风味烧饼。

烧饼里夹着猪肉和虾,孜然羊肉和胡椒牛肉,所有食材都是手工做的。

她们每周工作七天,生意好的时候可以卖出200到300个烧饼,

每个烧饼三到五美元不等。

她们还卖两种规格的羊肉汤,通常和烧饼搭配,价格为四美元或八美元。

这个狭小的食品摊位约9平米,没有英文名,也没有广告,

却在这个受疫情重创的社区中大受欢迎。

一方面,疫情期间,规模小、方便外带的餐馆更容易提供送餐服务,

因为竞争减少,两位老板的生意变得好起来。

另一方面,最近几个月,许多店铺被淘汰,

新租客的租金下降,也给她们省了不少钱。

同时,为了减少成本,两人每天直接去东亚产品超市购买原材料,

而不再通过昂贵的分销商采购。

这个烧饼摊位主要依靠华裔客人的支持。

于说:“都是靠口口相传。我们提供17种烧饼口味,欢迎所有人来品尝。”

一位顾客说,“刚才有位女士一口气买了20个烧饼——所以我必须也得试一下,”

她说,她和她的母亲都是台湾裔,

已经有十多年没有在法拉盛看到这种烧饼了。

最近,法拉盛和纽约其他唐人街的餐馆,都紧跟川菜或火锅的潮流。

北方风味的街头食品,如烧饼,已经变得不那么普遍了。

于说,她计划扩充更大空间,满足不断增长的需求。
